Strawberry Balsamic Dressing

Preparation: 10 minutes Makes about 1 Cup Ingredients: 1 cup sliced strawberries ¼ cup water 2 tablespoons balsamic vinegar 1 tablespoon finely chopped onion 1 tablespoon Dijon mustard 1/8 teaspoon ground black pepper Directions: Place all of the ingredients into a blender. Blend until smooth. Store leftover dressing in a covered container in the refrigerator for up to five days, and shake well before using.

Healthy Ranch Dressing

Preparation: 20 minutes Makes about 1 Cup Ingredients: ½ cup water 2 ounces raw, unsalted cashews (about ½ cup) 3 tablespoons lemon juice 1 teaspoon apple cider vinegar ½ teaspoon granulated onion ½ teaspoon granulated garlic 1 green onion, sliced 2 teaspoons chopped fresh dill (or 3/4 teaspoon dried) Directions: Place the water, cashews, lemon juice, vinegar, granulated onion, and granulated garlic into a blender, set aside for at least 15 minutes so the cashews can soften. Blend until very smooth, adding a little water as needed. Add the green onion and dill, and blend for just a few more seconds so that you can still see green flecks in the dressing. Refrigerate for 2-3 hours or overnight

Creamy Avocado Pesto

Preparation: 10 minutes Serves: 6 Ingredients: 1 large bunch of basil 2 ripe avocados ½ cup of walnuts 1 tablespoon lemon juice (optional) 3-4 cloves garlic ½ teaspoon sea salt ¼ cup water ¼ cup extra-virgin olive oil ground pepper to taste Directions: Remove basil leaves from stems. Combine all ingredients in food processor and pulse until creamy. Serve over pasta or spiraled zucchini for a healthy alternative. Add cherry tomatoes for a pop of flavor and color
