Beet Hummus

Preparation: 10 minutes Serves: 4 – 6 Ingredients: 1 beet 1 can chickpeas (15oz) 1/3 cup tahini 2 cloves of garlic 3 tbsp. olive oil 1/2 tsp. salt juice of 1 lemon Directions: Add all ingredients to food processor, blend until smooth. Serve chilled. * Serve with Flax Crackers

Barbecue Sauce

Preparation: 10 minutes Cook Time: 20 minutes Makes: 2 cups Ingredients: 1 ½ cups water 1 can tomato paste (6 oz.) ½ cup cooked black beans, drained and rinsed ¼ cup raisins 2 tablespoons mustard 1 teaspoon chili powder 1 teaspoon apple cider vinegar ¾ teaspoon granulated garlic ¾ teaspoon granulated onion Directions: Place all of the ingredients into a blender and blend until smooth. After mixture is smooth you can serve the sauce as is or simmer it to deepen the flavors and color. If you choose to cook, pour the sauce into a medium saucepan and bring to almost boiling over medium heat. Reduce the heat to low and simmer partially covered, stirring occasionally, for 15 to 20 minutes.

Veggie Burgers

Preparation: 20 minutes Cook Time: 50 minutes Serves: 10 Ingredients: 1 cup water ½ dry/uncooked short-grain brown rice 1 can kidney or pinto, drained and rinsed 1 cup organic old-fashioned rolled oats ½ large onion, chopped 6TBSP flax meal 1 finely chopped carrot 6 mushrooms, chopped ¼ cup tomato paste or ketchup 2 teaspoons granulated garlic 2 teaspoons dried oregano 1 ½ teaspoons chili powder 1 teaspoon granulated onion 1 teaspoon ground cumin 1 teaspoon dried basil 1tsp salt Directions: Bring the water and rice to a boil in a medium saucepan over high heat, uncovered.
